Introduction to Corn
Corn is the seed of the plant Zea mays, also known as maize. lt is originally from Central Americaspecifically Mexico and Peru. Introduced to China in the 16th century, it now has a cultivationhistory of over 400 years. Currently, it is grown throughout China, especially in the Northeast,North China, and Southwestern provinces. The Northeast primarily cultivates flint corn, while Nort!China mostly grows dent corn, which is suitable for grinding into meal but is considered inferior inquality to flint corn.
There are many varieties of corn, categorized by use: grain and feed varieties, vegetable varieties(including waxy, sweet, and baby corn), processing varieties (sweet corn, baby corn), and poppingvarieties (specifically for popcorn). Corn is a nutritious staple among coarse grains and is quitebeneficial for human health.
The corn germ is particularly large, accounting for 10%-14% of its total weight and containing asignificant amount of fat, making it a source for extracting corn oil. However, due to its relativelyhigh fat content, corn is prone to rancidity during storage.
Corn can be ground into meal or processed into grits.
